I drove specifically to try out the new Don Chilaquil food truck parked in the POKE 3 lot next to UTEP. Wow, this was really really good. It was worth the drive.
I’ve been disappointed with Chilaquiles before because of chips that were soggy or would chip and break into a thousand pieces, eggs that were overcooked, or had watery bland salsa. This WAS NOTHING LIKE THAT.
The salsas were flavorful, I asked for samples of the Verde and Chipotle sauces to try before ordering just because I was afraid it would be too spicy, but it was perfect with only a little kick. If you wanted more spice, get the Habanero sauce.
The menu is very simple but they’re generous with the portions, especially on Thursdays where they have their all day $6 deal. Normal price is $7-$8.5. You have 2 options, one with protein and one without. Then you add salsas and then toppings.
I got the Carne Asada with Chipotle and Chicken with Verde salsa. I brought it home because I couldn’t eat it by myself. It didn’t get soggy because they packaged it well and the sauces were on the side.
The chips were thick and crispy, the salsas flavorful and enhanced the ingredients, the carne asada and the chicken were nicely seasoned, onions had a snap and bite, the white cheese and crema added a refreshing creaminess to contrast the heat of the salsas. The eggs were perfectly cooked and when I cut into it the yolk oozed into all the nooks and crevices. Yum!
To be honest this is a huge amount of food for one much less two people. I got some flan for my husband cuz he loves it. I brought it home and made some huevos divorcarios with them lol. He can’t stop raving about them. He said that we need to make it a thing every Thursday morning. Hah, next time I’ll send him to pickup.
